Q) What exactly is YOGURT?

 

 

 

 

 

 

 

 

 

 

 

 

 

 

A) YOGURT, also spelled yoghurt, is a

 

 

 

 

smooth, semi-solid dairy product made from

 

 

 

 

milk.  People all over the world have eaten

 

 

 

 

yogurt for thousands of years but, con-

 

 

 

 

sumption in the United States did not begin

 

 

 

 

in earnest until the late 1900's.  Yogurt makers

 

 

 

 

add live active food cultures to milk to make

 

 

 

 

yogurt.  These cultures multiply at carefully control-

 

 

 

led temperatures and cause milk to ferment (ripen).

 

 

 

During the fermentation process, the cultures change

 

 

 

lactose (milk sugar) into lactic acid. Lactic acid

 

 

 

 

causes fluid milk to thicken resulting in yogurt.

freezing the yogurt product in a sterile, carefully con-

 

 

 

trolled, USDA approved machine made especially for

 

 

 

dispensing soft serve products.  The process it uses to

 

 

 

create such a smooth texture and flavor is very similar

 

 

 

to the one used by many at home, with the old crank
